Yogurt Berry Bran Muffins

For many reasons, we've really been trying to find ways to eat more healthfully lately. We joined the CSA, and I've been trying to make food from scratch when possible instead of buying processed foods. We only buy whole grain bread now, and we keep lots of fruit around for snacking. I found this easy muffin recipe online, and they make a great snack or breakfast. I like to take them to the pool, since they're easy to eat on the go. Sawyer really loves them; Parker is ... getting used to them.

Yogurt Berry Bran Muffins

Prep time: 10 minutes
Start to finish: 30 minutes
Makes: 12 muffins

Ingredients:
1 cup Fiber One original bran cereal
2 egg whites or 1 egg, slightly beaten
1/4 cup vegetable oil
2 containers (6 oz. each) vanilla yogurt (or any other flavor)
1-1/2 cups all-purpose flour
1/3 cup packed brown sugar
1-1/4 teaspoons baking soda
1/2 teaspoon salt
1/2 cups fresh raspberries or blueberries

Directions:
Heat oven to 400 degrees F. Place paper baking cup in each of 12 regular-size muffin cups, or grease bottom of each muffin cup with shortening. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin (or crush in food processor).
In medium bowl, stir together egg whites, oil and yogurt. Add cereal, flour, brown sugar, baking soda and salt; stir just until dry ingredients are moistened. Gently stir in berries. Divide batter evenly among muffin cups.
Bake 18 minutes or until golden brown. Immediately remove from pan.
